Silver Pallette Granola

I never seem to make a recipe as it is written. Do you?

I almost always do my own thing. I guess this comes from years of cooking and knowing what I like.

A friend gave me this recipe and I adapted it. My husband is the granola eater, eating a double batch of this yummy granola recipe every other week. So he cooks it!

Gene gets up at 4: 15 a.m. on his workdays to open his department at 6 a.m. and he needs something hardy (and healthy) that lasts. This is what he chooses to eat.

Silver Palate Granola (adapted)

3 cups whole, cut up oats

1 cup chopped nuts or combo of nuts (we use almonds as they are a healthy fat)

1 cup dried combo of fruits (we use 1 cup of craisin’s)

1 Tbsp. vanilla

1 Tbsp. cinnamon

½ tsp. salt

1/3 cup brown sugar (1/4 cup is also good)

1 cup maple syrup (1/2 or 1/3 cup is good)

3 Tbsp. ground flaxseed (for Omega 3’s)

3 Tbsp. chia seeds (for Omega 3’s)

¼ cup Seven Grain Cereal (from Country Life Foods for Omega 3’s)

Mix all ingredients together well.

Transfer to a large cookie sheet sprayed with non-stick spray.

Bake at 325 for 35-40 minutes.

Stir once ½ ways through cooking time.

Cool completely.

Store in airtight jars or container.
